As an author and a publisher my time is very precious to me. I do as much short-cuts as I can, make quick simple meals, try to exercise when I can, and try to be healthy. In the past few years the pounds have been creeping up. I hate the yo-yo effect of dieting, and I love food. It’s hard when you sit at the computer all day and rush to prepare a meal. Most of the processed meals are full of fats and salt, two things I don’t need.
My doctor has put me on a high fiber diet, but because of my diverticulosis I can’t have some foods that are high in fiber. I love nuts, strawberries, corn, and blueberries. Those are my biggest no-nos. So what’s a person to do? East as healthy as you can.
My daughter and I are watching what we eat and going by Weight Watchers standards, or trying to. I’m down twelve pounds and stuck on it right now. She’s down a lot more. There will be less of us to see when you see us next. We’re always sharing recipes. I’d like to share a Chicken Taco with you that is 0 points in Weight Watchers. The extras are added points, but it makes a great meal for tacos or to eat over rice. And the best part is it is easy. I love easy.
1 can black beans, drained and rinced
1 can corn, drained
1 lb. chicken breast, boneless and skinless, frozen
1/2 package taco seasoning
1 jar taco sauce
Layer it in a crockpot as stated above. Cook on high for 6-8 hours until chicken is cooked. Shred chicken and serve with whole wheat soft taco shells. I use Ole Xtreme Wellness. Add sour cream, onions, lettuce, cheese, or whatever you prefer.
